It is understood that edible oil can be degraded by high temperature and repeated frying for a long time to produce a variety of harmful substances, posing a threat to health. In this project, the experts conducted a series of experiments to study the safety of frying foods consumed by Chinese residents daily, analyzed the oil absorption rate of the frying oil and its deterioration rules, and the sanitary status of the frying oil in the decade. A comparative analysis was carried out, and the polar component (PC) was finally selected as a new health indicator, and was included in the national standard of the Hygienic Standard for Edible Plant Frying Oil, which guides residents to form scientific health. Tianjin experts have calculated the monthly safe eating times of various fried foods through scientific methods.
